6 cups cubed day-old bread (preferably brioche or challah)

3 medium apples, peeled, cored, and diced (like Granny Smith or Honeycrisp)

1 cup whole milk

1 cup heavy cream

4 large eggs

3/4 cup granulated sugar

1 tablespoon vanilla extract

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

2 tablespoons unsalted butter, for greasing the skillet

Powdered sugar and caramel sauce for serving (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and place a 12-inch cast iron skillet or baking dish in the oven to warm. This helps create a crisp bottom.

    Prepare the Bread: In a large mixing bowl, combine the cubed bread with diced apples and raisins (if using). Toss gently to mix and set aside.

      Mix the Custard: In another bowl, whisk together the eggs, granulated sugar, milk, heavy cream, vanilla extract, ground cinnamon, nutmeg, and salt until well combined and smooth.

        Combine Ingredients: Pour the custard mixture over the bread and apple mixture. Gently fold the bread to ensure it's evenly coated with the custard. Let it sit for about 10-15 minutes so the bread can soak up the liquid.

          Prepare the Skillet: Carefully remove the preheated skillet from the oven. Add the unsalted butter and swirl to coat the bottom and sides of the skillet.

            Bake: Pour the soaked bread and apple mixture into the skillet, spreading it out evenly. Place the skillet back in the oven and bake for 35-40 minutes, or until the top is golden brown and the custard is set (you can test by inserting a knife in the center; it should come out clean).

              Cool & Serve: Allow the bread pudding to cool for about 10-15 minutes before serving. Dust with powdered sugar and drizzle with caramel sauce if desired. Serve warm, optionally with whipped cream or vanilla ice cream.
