2 medium zucchinis, grated

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

4 large flour tortillas

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Salsa (optional, for serving)

Prepare the Zucchini: Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible.

    Cook the Onion and Garlic: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic, cumin, and chili powder, cooking for an additional minute until fragrant.

      Combine Filling Ingredients: Stir in the grated zucchini and cook for about 5-7 minutes until the zucchini is tender. Season with salt and pepper to taste. Remove from heat and let the mixture cool slightly. Once cooled, mix in the shredded cheese until combined.

        Assemble the Quesadillas: Lay out a tortilla on a clean surface. Spread about a quarter of the zucchini and cheese mixture evenly across half of the tortilla. Fold the other half over to cover the filling. Repeat with the remaining tortillas and filling.

Once hot, place one folded quesadilla in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy. Repeat with the remaining quesadillas, adding more oil as needed.
