For the Quesadillas:

4 large flour tortillas

1 cup ricotta cheese

1 cup whipped cream cheese

1 cup milk chocolate chips

1 cup strawberry jam or fresh strawberries, chopped

1 cup dark chocolate ganache (see instructions below)

1 teaspoon vanilla extract

Powdered sugar, for dusting

2 tablespoons unsalted butter (for frying)

For the Chocolate Ganache:

½ cup heavy cream

½ cup semi-sweet chocolate chips

Instructions
 

Prepare the Chocolate Ganache:

    - In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

      - Remove from heat and add the semi-sweet chocolate chips. Stir until smooth and fully melted. Set aside to cool slightly.

        Make the Filling:

          - In a mixing bowl, combine ricotta cheese, whipped cream cheese, vanilla extract, and a pinch of powdered sugar (optional for added sweetness). Mix until smooth and creamy.

            Assemble the Quesadillas:

              - On one half of each tortilla, spread a layer of the ricotta mixture.

                - Sprinkle a layer of milk chocolate chips on top, then add a spoonful of strawberry jam or the chopped strawberries. Drizzle some of the chocolate ganache over the top.

                  - Fold the tortilla in half to create a quesadilla.

                    Cook the Quesadillas:

                      - In a large skillet, heat the unsalted butter over medium heat until melted and slightly bubbling.

                        - Add the folded quesadilla to the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy. You can press down slightly with a spatula for even cooking.

                          Serve:

                            - Remove the quesadilla from the skillet and let it cool for a minute before cutting into wedges.

                              - Dust with powdered sugar and serve with extra chocolate ganache and strawberry jam for dipping.
