Ingredients

1 lb large shrimp, peeled and deveined

1 cup couscous

1 1/4 cups vegetable or chicken broth

2 tablespoons olive oil

3 tablespoons fresh lemon juice (about 1 large lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Shrimp Marinade: In a bowl, combine the shrimp, olive oil, lemon juice, lemon zest, minced garlic, oregano, basil, salt, and pepper. Toss well to ensure the shrimp are evenly coated. Let this marinate for about 15-20 minutes while you prepare the couscous.

Cook the Couscous: In a medium saucepan, bring the vegetable or chicken broth to a boil. Once boiling, add the couscous, stir briefly, then cover and remove from heat. Let it sit for about 5 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add the marinated shrimp along with the marinade. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque, stirring occasionally for even cooking.

Combine the Dish: Once the shrimp are cooked, gently fold them into the couscous, mixing well to integrate the flavors. Taste and adjust the seasoning if necessary.

Serve: Plate the Lemon Herb Shrimp and Couscous, garnishing with freshly chopped parsley. Serve with lemon wedges on the side for an extra zesty kick.
