1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken or vegetable broth

2 tablespoons olive oil

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 cup green peas (optional, for added color and nutrition)

Cook the Rice: In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the jasmine rice, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
