Ingredients

1 cup fig jam

4 flour tortillas (8-inch size)

1 ½ cups shredded mozzarella cheese

½ cup crumbled goat cheese

2 tablespoons balsamic glaze (optional)

Fresh thyme leaves (for garnish)

2 tablespoons unsalted butter (for cooking)

Instructions

Prep the Ingredients: Gather all the ingredients on your countertop. If your fig jam is too thick, microwave it for about 10 seconds to soften it slightly.

Assemble the Quesadillas: Take one tortilla and spread about ¼ cup of fig jam evenly over one side. Sprinkle ⅓ cup of shredded mozzarella cheese over the jam, followed by 2 tablespoons of crumbled goat cheese. Place another tortilla on top to form a sandwich.

Cook the Quesadillas: In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for about 2-3 minutes, or until the bottom is golden brown and the cheese starts to melt.

Flip and Finish: Using a spatula, carefully flip the quesadilla and add the remaining butter to the pan if needed. Cook for another 2-3 minutes on the other side until golden and the cheese is fully melted. Remove from the skillet and let it cool for a minute before slicing into wedges.

Serve: Drizzle with balsamic glaze and garnish with fresh thyme leaves for a pop of color and aroma. Serve warm and enjoy this delightful sweet and savory treat!
