Simple Creamy Tomato Basil Soup with Grilled Cheese

Ingredients
  

2 tablespoons olive oil

1 small onion, diced

2 garlic cloves, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 cup heavy cream (or coconut cream for dairy-free)

1 teaspoon sugar

Salt and pepper to taste

1 cup fresh basil leaves, chopped

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish

For Grilled Cheese:

4 slices of bread (your choice)

4 slices of cheese (cheddar, mozzarella, or your preference)

Butter for grilling

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a gentle simmer and allow it to cook for 15 minutes to meld the flavors.

      Blend for Creaminess: Remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, then return it to the pot.

        Stir in Cream and Season: Add the heavy cream, sugar, salt, and pepper to taste. Stir in the chopped basil and balsamic vinegar. Return the soup to low heat to warm through, about 5 minutes.

          Prepare Grilled Cheese: While the soup is warming, heat a skillet over medium heat. Butter one side of a slice of bread and place it, butter-side down, on the skillet. Place a slice of cheese on top. Butter another slice of bread on one side and place it on top of the cheese, butter-side up. Toast until golden brown and flip to toast the other side until the cheese is melted. Repeat with remaining slices.

            Serve: Pour the creamy tomato basil soup into bowls. Serve hot, garnished with fresh basil leaves and alongside the grilled cheese sandwiches cut into wedges.
