Ingredients

For the Beef Tacos:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup shredded lettuce

1 cup grated cheese (cheddar or Mexican blend)

1 ripe avocado, sliced

Fresh cilantro, for garnish

For the Fresh Salsa:

2 medium tomatoes, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Prepare the Fresh Salsa:

    - In a medium bowl, combine the diced tomatoes, red onion, minced jalapeño, chopped cilantro, and lime juice.

      - Season with salt to taste and mix well. Set aside to let the flavors meld.

        Cook the Beef:

          - In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spoon as it cooks.

            - Add the chopped onion and minced garlic to the skillet, stirring until the onion becomes translucent, about 3-4 minutes.

              - Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another 3-4 minutes until the spices are fragrant.

                Warm the Tortillas:

                  - In a separate skillet or on a griddle, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

                    Assemble the Tacos:

                      - Place a generous scoop of the beef mixture in the center of each tortilla.

                        - Top with shredded lettuce, grated cheese, and sliced avocado.

                          - Add a spoonful of fresh salsa on top for that extra zing.

                            - Garnish with fresh cilantro leaves.

                              Serve:

                                - Arrange the tacos on a serving platter and enjoy immediately while they are warm! Serve with extra lime wedges and salsa on the side.
