Simple Beef Tacos with Avocado Salsa

For the Beef Filling:

1 pound ground beef

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

For the Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

Fresh cilantro, chopped (to taste)

Salt to taste

For Garnishing:

Sour cream (optional)

Shredded cheese (optional)

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat.

      - Add the chopped onion and sauté until translucent, about 3-4 minutes.

        - Stir in the minced garlic and cook for an additional 1 minute until fragrant.

          - Increase the heat to medium-high and add the ground beef. Break it apart with a spatula and cook until browned, about 6-8 minutes.

            - Drain excess fat if necessary.

              - Season the beef with chili powder, cumin, paprika, salt, and pepper. Stir well to combine and let it simmer for 2-3 minutes.

                Make the Avocado Salsa:

                  - In a medium bowl, combine the diced avocados, tomato, red onion, and jalapeño if using.

                    - Squeeze in the lime juice and gently stir until everything is well mixed.

                      - Add chopped cilantro and salt to taste, then set aside.

                        Warm the Tortillas:

                          - In another dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until pliable.

                            Assemble the Tacos:

                              - Place a generous amount of beef filling onto each tortilla.

                                - Top with a spoonful of avocado salsa.

                                  - Garnish with a dollop of sour cream and a sprinkle of shredded cheese, if desired.
