Ingredients

2 cups fresh blueberries

1 tablespoon honey (or maple syrup)

1 tablespoon lemon juice

Zest of 1 lemon

1 cup heavy cream

1/2 cup mascarpone cheese

1/4 cup powdered sugar

1 teaspoon vanilla extract

Fresh mint leaves (for garnish)

Instructions

Prepare the Blueberry Compote: In a small saucepan, combine the fresh blueberries, honey, lemon juice, and half the lemon zest. Cook over medium heat, stirring occasionally, until the blueberries release their juices and start to soften (about 5-7 minutes). Remove from heat and let cool completely.

Make the Cream Mixture: In a large mixing bowl, combine the heavy cream, mascarpone cheese, powdered sugar, vanilla extract, and the remaining lemon zest. Using an electric mixer, whip the mixture on medium-speed until soft peaks form (around 3-5 minutes). Be careful not to overwhip; you want it smooth and silky.

Fold the Blueberries: Gently fold the cooled blueberry mixture into the whipped cream mixture, leaving some streaks for a marbled effect. Be careful not to overmix; you want to maintain a light and airy texture.

Assemble the Fool: Spoon the creamy blueberry mixture into serving glasses or bowls. Layer as desired or simply dollop on top for a beautiful presentation.

Chill: Cover the servings with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.

Serve: Before serving, garnish with fresh mint leaves and an extra sprinkle of lemon zest for a pop of color and flavor.
