2 cups heavy cream

1 cup whole milk

2 tablespoons loose Earl Grey tea (or 4 tea bags)

1/2 cup granulated sugar

2 tablespoons gelatin powder

6 tablespoons cold water

1 teaspoon vanilla extract

1 pinch of salt

Garnish: Edible flowers, fresh berries, or a drizzle of honey

Instructions
 

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the mixture is hot but not boiling.

    Once the mixture is heated, add the loose Earl Grey tea (or tea bags) and allow it to steep for about 10 minutes. Stir occasionally to infuse the flavors.

      Meanwhile, in a small bowl, sprinkle the gelatin powder over the cold water. Let it bloom for about 5 minutes until it becomes gelatinous.

        After the steeping time, strain the cream mixture through a fine sieve into a clean saucepan to remove the tea leaves or bags.

          Place the strained mixture back on low heat and add the bloomed gelatin, stirring gently until fully dissolved. Be careful not to let it boil.

            Add the vanilla extract and a pinch of salt, mixing thoroughly to combine.

              Remove the saucepan from heat and allow the mixture to cool slightly for about 10 minutes.

                Pour the panna cotta mixture evenly into individual serving cups or molds. Allow them to cool at room temperature before transferring to the refrigerator.

                  Chill the panna cotta for at least 4 hours or until set completely.

                    To serve, run a thin knife around the edges of the molds (if using); invert onto plates. If in cups, simply spoon it out. Garnish with edible flowers, fresh berries, or a drizzle of honey for an elegant touch.
