Shrimp Scampi Pasta Bake

12 oz. rotini or penne pasta

1 lb. large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

1/2 cup dry white wine (or chicken broth)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté Shrimp: In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant. Add shrimp and cook until they turn pink, about 3-4 minutes. Season with salt, pepper, and half of the lemon juice. Remove from heat.

        Make the Sauce: In the same skillet, add the white wine (or chicken broth) and bring to a simmer, scraping up any bits from the bottom of the pan. Pour in the heavy cream, lemon zest, and the remaining lemon juice. Allow it to simmer for about 3-5 minutes, then stir in the Parmesan cheese until melted and well combined.

          Combine Ingredients: In a large bowl, mix the cooked pasta, shrimp, and sauce until everything is evenly coated. If desired, fold in half of the mozzarella cheese.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13-inch baking dish. If using, sprinkle breadcrumbs evenly on top for added crunch and then top with the remaining mozzarella cheese.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and a light golden crust forms on top.

                Garnish: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
