1 pound ground turkey

2 medium sweet potatoes, peeled and diced into ½-inch cubes

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon dried thyme

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 cup fresh spinach, roughly chopped

2 tablespoons soy sauce or tamari (for a gluten-free option)

Optional toppings: chopped fresh parsley, avocado slices, or hot sauce

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they are tender and beginning to brown. Remove them from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the ground turkey. Cook it over medium-high heat until it’s no longer pink, breaking it up with a spatula as it cooks (about 5-7 minutes).

      Sauté Aromatics: Once the turkey is browned, add diced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables are softened. Add minced garlic, smoked paprika, cumin, dried thyme, and a pinch of salt and pepper. Stir for about 1 minute until fragrant.

        Combine Ingredients: Return the cooked sweet potatoes to the skillet. Add the chopped spinach and soy sauce (or tamari). Stir everything together and cook for another 2-3 minutes until the spinach is wilted and everything is heated through.
