Savory Turkey and Sweet Potato Shepherd's Pie

For the filling:

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 cup chicken or vegetable broth

1 tablespoon tomato paste

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 tablespoons olive oil

For the sweet potato mash:

2 large sweet potatoes, peeled and cubed

2 tablespoons butter

1/4 cup milk (or plant-based alternative)

Salt and pepper to taste

Optional: pinch of nutmeg for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Sweet Potatoes:

      - In a large pot, boil water and add the cubed sweet potatoes. Cook until tender (about 15-20 minutes). Drain and return to the pot.

        - Mash the sweet potatoes with butter, milk, salt, and pepper (and nutmeg if using) until smooth and creamy. Set aside.

          Prepare the Filling:

            - Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent (about 5 minutes).

              - Add minced garlic and diced carrots, sauté for an additional 2-3 minutes until the carrots begin to soften.

                - Stir in the ground turkey, breaking it up with a spatula. Cook until browned and fully cooked through (about 7-8 minutes).

                  - Add the frozen peas, chicken or vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well and let the mixture simmer for 5-7 minutes until slightly thickened.

                    Assemble the Shepherd's Pie:

                      - In a baking dish, spread the turkey filling evenly.

                        Top with Sweet Potato Mash:

                          - Carefully spread the sweet potato mash over the turkey mixture, smoothing it out with a spatula. Create decorative swirls or peaks with a fork for a beautiful finish.

                            Bake:

                              - Bake in the preheated oven for 25-30 minutes or until the top is slightly golden and the filling is bubbling around the edges.

                                Serve:

                                  - Allow to cool for 5 minutes before serving. Garnish with fresh herbs if desired.
