Savory Mushroom and Spinach Tart

1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach, chopped

2 cups mushrooms (cremini or button), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil

1 tbsp butter

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned and softened, around 5-6 minutes. Stir in the chopped spinach and cook until wilted. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, mozzarella, grated Parmesan, and the two eggs. Mix well until combined, then fold in the cooled mushroom and spinach mixture. Ensure everything is evenly incorporated.

        Roll Out the Pastry: On a lightly floured surface, roll out the puff pastry to fit a 9-inch tart pan. Press it gently into the pan, trimming any excess pastry hanging over the edges.

          Fill the Tart: Pour the vegetable and cheese mixture into the prepared pastry shell, spreading it evenly.

            Egg Wash: Beat the remaining egg in a small bowl. Brush the edges of the pastry with the egg wash for a golden finish.
