1 cup Arborio rice

4 cups low-sodium vegetable broth

1 cup fresh spinach, chopped

1 cup cremini mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a medium saucepan, heat the vegetable broth over low heat and keep it warm.

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sauté until they're soft and browned, about 5-7 minutes. Season with a pinch of salt and pepper.

        Toast the Rice: Stir in the Arborio rice and cook for about 2 minutes, allowing the rice to absorb the flavors and become slightly translucent.

          Deglaze with Wine: (Optional) Pour in the white wine and stir constantly until it has mostly evaporated.

            Add Broth Gradually: Begin adding the warm vegetable broth, one ladle at a time. Stir frequently and wait until most of the broth is absorbed before adding the next ladle. This process will take about 18-20 minutes.

              Incorporate Spinach: When the rice is almost al dente, stir in the chopped spinach. Cook for an additional 2-3 minutes until the spinach wilts.

                Finish with Cheese and Butter: Remove from heat and stir in the grated Parmesan cheese and butter until creamy. Adjust seasoning with salt and pepper to taste.

                  Garnish and Serve: Spoon the risotto into bowls and garnish with fresh parsley and extra Parmesan if desired. Serve hot.
