Savory Garlic Parmesan Shrimp and Rice Bowls

1 pound large shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken broth (or vegetable broth for a vegetarian option)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

1 tablespoon fresh lemon juice

1/4 cup fresh parsley, chopped (for garnish)

Optional: Sliced green onions and lemon wedges, for serving

Instructions
 

Prepare the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

    Sauté the Shrimp: While the rice is cooking, heat a large skillet over medium heat. Add 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.

      Season the Shrimp: Add the shrimp to the skillet along with smoked paprika, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for another 1-2 minutes on the other side until fully cooked.

        Add the Finishing Touches: Remove the skillet from heat. Stir in the remaining 2 tablespoons of butter, grated Parmesan cheese, and lemon juice until melted and creamy. Adjust seasoning as necessary.

          Assemble the Bowls: Fluff the cooked rice with a fork and divide it among serving bowls. Top each bowl with the savory garlic Parmesan shrimp mixture.
