Ingredients

For the Chicken:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

For the Vegetables:

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, sliced

1 cup frozen peas

2 cups chicken broth

For the Dumplings:

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

½ teaspoon dried thyme

½ teaspoon garlic powder

¾ cup milk

¼ cup unsalted butter, melted

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Sear the Chicken:

    - In a large skillet, heat olive oil over medium heat. Season the chicken pieces with garlic powder, onion powder, salt, and pepper.

      - Add the chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

        Sauté the Vegetables:

          - In the same skillet, add the diced onion, minced garlic, sliced carrots, and celery. Sauté for about 4-5 minutes until the vegetables are slightly softened.

            Add the Broth:

              - Pour in the chicken broth, stirring to combine. Bring the mixture to a gentle simmer.

                Return Chicken to Skillet:

                  - Add the seared chicken back to the skillet and stir in the frozen peas. Allow the mixture to simmer for another 5 minutes.

                    Prepare the Dumpling Batter:

                      - In a mixing bowl, combine the flour, baking powder, salt, thyme, and garlic powder. In a separate bowl, mix together the milk and melted butter. Slowly pour the milk mixture into the dry ingredients, stirring until just combined.

                        Create Dumplings:

                          - Drop spoonfuls of the dumpling batter directly over the simmering chicken mixture. Do not worry about spreading it out; the dumplings will expand while cooking.

                            Cook the Dumplings:

                              - Cover the skillet with a lid and let the dumplings steam for about 15-20 minutes or until they are fluffy and cooked through. Avoid lifting the lid during this time to ensure they steam properly.

                                Garnish and Serve:

                                  - Once the dumplings are ready, sprinkle fresh chopped parsley on top for a burst of color and flavor. Serve hot directly from the skillet for a cozy meal.
