For the Beef Filling:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 can (6 oz) tomato paste

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Cheese Filling:

15 oz ricotta cheese

1 cup cottage cheese

1 egg

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese (divided)

1 tablespoon fresh parsley, chopped

For Assembly:

9-12 lasagna noodles (cooked according to package directions)

2 cups marinara sauce (store-bought or homemade)

Extra mozzarella cheese for topping

Prepare the Beef Filling: In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, sautéing until softened. Stir in the crushed tomatoes, tomato paste, Italian seasoning, and season with salt and pepper. Let simmer for 10 minutes, then remove from heat and allow to cool slightly.

    Make the Cheese Filling: In a mixing bowl, combine ricotta cheese, cottage cheese, egg, Parmesan cheese, 1 cup of mozzarella cheese, and chopped parsley. Mix until smooth and well combined.

      Assemble the Rollups: Preheat the oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish. Lay out a cooked lasagna noodle on a clean surface. Spread about 2-3 tablespoons of the cheese filling along the length of the noodle, followed by a layer of the beef mixture. Carefully roll the noodle up from one end to the other.

        Place in Dish: Position the rolled noodle seam-side down in the prepared baking dish. Repeat this process with the remaining noodles, cheese filling, and beef mixture, arranging them in a single layer.

          Top the Rollups: Once all the rollups are in the dish, pour the remaining marinara sauce over the top. Sprinkle with additional mozzarella cheese to cover.

            Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the underside of the foil with cooking spray). Bake for 25 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the cheese on top is bubbly and golden brown.

              Serve: Let the lasagna rollups rest for 5-10 minutes before serving. Garnish with extra parsley if desired and enjoy!
