Ingredients

1 lb beef sirloin, thinly sliced against the grain

4 cups broccoli florets

1 cup bell pepper, sliced (red or yellow for color)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon honey or brown sugar

Salt and pepper to taste

Cooked jasmine or basmati rice for serving

Sesame seeds and sliced green onions for garnish

Instructions

Marinate the Beef: In a bowl, combine the sliced beef, 1 tablespoon of soy sauce, cornstarch, and black pepper. Mix well and let it marinate for 15-20 minutes while you prepare the other ingredients.

Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, rice vinegar, and honey (or brown sugar). Set aside.

Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2 minutes to impart a vibrant color and tender-crisp texture. Drain and immediately plunge them into an ice bath to stop cooking. Set aside.

Stir-Fry the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef in a single layer and let it sear for about 2-3 minutes without stirring. Flip and cook for an additional 1-2 minutes until it’s browned and just cooked through. Remove the beef from the pan and set aside.

Sauté Aromatics: In the same pan, add the remaining tablespoon of vegetable oil. Add garlic and ginger, sauté for about 30 seconds or until fragrant.

Combine Ingredients: Add the blanched broccoli and sliced bell pepper to the pan. Stir-fry for about 2-3 minutes until the bell pepper has softened. Pour in the sauce mixture and stir well to coat the vegetables.

Finish with Beef: Return the cooked beef to the pan and toss everything together until well-combined and heated through, about 1-2 minutes. Adjust seasoning with salt and pepper to taste.

Serve: Serve hot over a bed of cooked jasmine or basmati rice. Garnish with sesame seeds and sliced green onions.
