2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon kosher salt

½ teaspoon black pepper

¾ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked bacon, chopped

¾ cup buttermilk

1 tablespoon fresh chives, chopped (optional)

1 tablespoon melted butter (for brushing)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter still intact.

        Add Cheese and Bacon: Gently fold in the shredded cheddar cheese and chopped bacon until evenly distributed. If using chives, add them at this point as well.

          Mix Wet Ingredients: In a separate bowl, pour in the buttermilk and mix gently until combined.

            Combine Mixtures: Create a well in the center of the dry ingredients and pour in the buttermilk. Using a fork, stir until the mixture forms a shaggy dough. Do not overmix; it’s okay if it’s slightly sticky and lumpy.

              Shape the Biscuits: Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick. Fold the dough over itself twice, giving it a few gentle kneads between each fold to create layers.

                Cut the Biscuits: Using a floured biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather any scraps and repeat until all dough is used.

                  Brush with Butter: Brush the tops of the biscuits with melted butter to enhance browning and add flavor.

                    Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and cooked through.
