2 cups fresh mushrooms (cremini or button), sliced

2 cups fresh spinach, washed and roughly chopped

3 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon thyme (fresh or dried)

1 teaspoon balsamic vinegar

Salt and pepper, to taste

Grated Parmesan cheese (optional, for serving)

Prepare the Ingredients: Start by cleaning the mushrooms with a damp cloth and slicing them into thin pieces. Wash the spinach thoroughly, shaking off excess water, and chop roughly. Mince the garlic and finely chop the onion.

    Sauté the Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onions and sauté for about 3-4 minutes until they become translucent. Then, add the minced garlic and sauté for another minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet, season with salt, pepper, and thyme. Sauté the mushrooms for about 6-8 minutes, stirring occasionally, until they are browned and tender.

        Add the Spinach: Once the mushrooms are cooked, incorporate the chopped spinach into the skillet. Stir and cook for an additional 2-3 minutes until the spinach is wilted.

          Finish with Balsamic: Drizzle the balsamic vinegar over the mixture while stirring. Allow to cook for another minute to let the flavors meld. Adjust seasoning if needed.
