3/4 cup light brown sugar, packed

1/4 cup granulated sugar

1/2 cup honey

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup shelled pistachios, chopped (reserve some for topping)

Flaky sea salt, for sprinkling on top

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butters & Sugars: In a large mixing bowl, cream together the softened butter, light brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes.

      Incorporate Honey & Egg: Mix in the honey, followed by the egg and vanilla extract, ensuring everything is well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chopped pistachios, ensuring they are evenly distributed throughout the dough.

            Shape the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently flatten each ball with your fingers or the bottom of a glass.
