Soy sauce is a foundational ingredient in many marinades, particularly in Asian cuisine. Its rich, umami flavor not only enhances the overall taste of the dish but also acts as a tenderizer for the fish. The sodium content in soy sauce helps to break down the proteins in salmon, making it more succulent and flavorful. When choosing soy sauce for your marinade, consider opting for low-sodium versions if you want to control salt levels while still enjoying that signature depth of flavor.

Ingredients

1/4 cup soy sauce

2 tablespoons fresh orange juice

2 tablespoons fresh lemon juice

1 tablespoon honey or maple syrup

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon sesame oil

1/4 teaspoon red chili flakes (optional, for a bit of heat)

Freshly ground black pepper, to taste

1 tablespoon chopped green onions, for garnish

Instructions

Combine Ingredients: In a medium-sized mixing bowl, whisk together the soy sauce, fresh orange juice, and lemon juice until well blended.

Sweeten the Mix: Add in the honey (or maple syrup) and rice vinegar, stirring until the honey fully dissolves into the mixture.

Flavor Boost: Incorporate minced garlic, grated ginger, sesame oil, and optional red chili flakes. Season with freshly ground black pepper to taste. Whisk until everything is thoroughly combined.

Marinate the Salmon: Place your salmon fillets (approximately 4-6 ounces each) in a resealable plastic bag or shallow dish. Pour the marinade over the salmon, ensuring it’s well coated. Seal the bag or cover the dish.

Refrigerate: Allow the salmon to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor immersion.

Cook the Salmon: When ready to cook, preheat your grill or oven. If grilling, cook on medium-high heat for 4-6 minutes on each side, or until the salmon flakes easily with a fork. If baking, preheat to 400°F (200°C) and cook for about 12-15 minutes, depending on thickness.

Serve and Garnish: Remove the salmon from the heat and drizzle with any leftover marinade that hasn't touched raw fish (boil the leftover marinade if using for safety). Garnish with chopped green onions before serving. Enjoy your deliciously marinated salmon!
