1 medium zucchini, sliced into half-moons

1 bell pepper (red or yellow), diced

1 small red onion, sliced

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

6 small corn or flour tortillas

4 oz goat cheese, crumbled

1 avocado, sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Preheat the oven to 425°F (220°C).

    Prepare the vegetables: In a large mixing bowl, combine the sliced zucchini, diced bell pepper, sliced red onion, and halved cherry tomatoes.

      Season the veggies: Drizzle the olive oil over the vegetables, and sprinkle the cumin, smoked paprika, salt, and pepper. Toss everything together until the veggies are evenly coated.

        Roast the veggies: Spread the vegetable mixture in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until the veggies are tender and slightly caramelized, stirring halfway through.

          Warm the tortillas: While the vegetables are roasting, heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.

            Assemble the tacos: Once the veggies are roasted, layer some onto each tortilla. Top with crumbled goat cheese and sliced avocado.

              Garnish and serve: Sprinkle fresh cilantro over the tacos and serve with lime wedges on the side for squeezing over the top to add extra flavor.
