4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Zest of 1 lemon

Pinch of salt

Black pepper to taste

¼ cup crumbled goat cheese (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Peaches: Slice the peaches in half, removing the pit. Place them cut-side up in a baking dish.

      Make the Herb Mixture: In a small bowl, combine the olive oil, honey (or maple syrup), finely chopped rosemary, finely chopped thyme, lemon zest, salt, and black pepper. Mix well to create a fragrant herb oil.
