2 cups fresh corn kernels (or 2 cups canned corn, drained)

1 ripe avocado, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 small jalapeño, seeds removed and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn: Spread the corn kernels on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with smoked paprika, salt, and pepper. Toss to coat evenly. Roast in the preheated oven for 15-20 minutes, or until the corn is slightly charred and golden, stirring halfway through.
