Roasted Cauliflower Tacos

1 medium cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

½ cup fresh cilantro, chopped

1 avocado, sliced

½ cup crumbled feta cheese (optional)

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Season the Cauliflower: In a large mixing bowl, combine the cauliflower florets, olive oil, smoked paprika, garlic powder, ground cumin, chili powder, salt, and pepper. Toss until the cauliflower is evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and golden, tossing halfway through for even cooking.

        Warm the Tortillas: While the cauliflower is roasting, heat a dry skillet over medium heat. Add the corn tortillas one at a time, warming for about 20-30 seconds on each side until pliable. Keep them warm in a clean kitchen towel.

          Assemble the Tacos: Once the cauliflower is done, remove it from the oven. To assemble, place a generous portion of roasted cauliflower in each tortilla, followed by a handful of sliced red cabbage, avocado slices, and a sprinkle of feta cheese, if using.

            Garnish and Serve: Top with fresh cilantro, and serve with lime wedges on the side for squeezing over the tacos.
