1 ½ cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsweetened cocoa powder

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup heavy cream

For the chocolate ganache:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

For garnish:

Mini Reese's Peanut Butter Cups, chopped

Drizzle of melted peanut butter

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, cocoa powder, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press this mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes, then remove and cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the peanut butter, powdered sugar, and vanilla extract, mixing until combined. Add the eggs one at a time, mixing on low speed after each addition until just blended. Finally, add the heavy cream and beat until smooth.

        Pour the Filling: Spread the cheesecake filling evenly over the cooled crust. Bake for 25-30 minutes or until the edges are set but the center still has a slight jiggle. Turn off the oven and let the cheesecake bars cool in the oven (with the door slightly ajar) for 1 hour. Then refrigerate for at least 4 hours, or preferably overnight, to set completely.

          Make the Chocolate Ganache: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour over the chocolate chips in a bowl. Let sit for a few minutes, then stir until smooth. Allow to cool slightly before dripping over the chilled cheesecake.

            Cut and Serve: Once the cheesecake is set, lift it from the pan using the parchment paper (if using). Cut into bars and drizzle melted peanut butter over the top. Finally, sprinkle with chopped mini Reese's Peanut Butter Cups for an extra treat.
