Ingredients

1 ½ cups all-purpose flour

1 cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 tablespoon red food coloring

1 cup chocolate chips (optional)

1 cup cream cheese frosting (store-bought or homemade)

Sprinkles for decoration (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Flavorings: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and red food coloring, mixing until the color is evenly incorporated.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Avoid overmixing. If desired, fold in the chocolate chips at this stage.

Bake the Cookie Cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Frost the Cake: Once the cookie cake is completely cool, spread the cream cheese frosting evenly over the top. If desired, add sprinkles for extra flair.

Serve and Enjoy: Slice your red velvet cookie cake into wedges or squares and serve it to friends and family. Enjoy the delightful blend of cookie texture and rich red velvet flavor!
