Ingredients

For the Filling:

2 cups fresh raspberries

2 cups fresh peaches, peeled, pitted, and sliced

½ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 tablespoons cornstarch

½ teaspoon ground cinnamon

For the Cobbler Topping:

1 cup all-purpose flour

1 tablespoon baking powder

½ cup granulated sugar

½ teaspoon salt

1 cup buttermilk

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

Optional: 1 teaspoon cinnamon for extra flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the fresh raspberries and peach slices. Add the sugar, lemon juice, vanilla extract, cornstarch, and ground cinnamon. Toss everything together gently until the fruit is well-coated. Pour the fruit mixture into a greased 9x13 inch baking dish.

Make the Cobbler Batter: In another bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, mix the buttermilk, melted butter, and vanilla extract until combined. Slowly add the wet ingredients to the dry ingredients and stir until just combined (do not over-mix; it’s okay if there are a few lumps).

Assemble the Cobbler: Pour the cobbler batter evenly over the fruit filling in the baking dish. Do not stir; the batter will spread as it bakes. If desired, sprinkle a little extra cinnamon over the top for added flavor.

Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the fruit is bubbling around the edges.

Cool and Serve: Allow the cobbler to cool for about 10-15 minutes before serving. It can be enjoyed warm or at room temperature, and is delicious served with a scoop of vanilla ice cream or whipped cream.
