8 oz (about 2 cups) rainbow pasta (fusilli or rotini works best)

1 cup cherry tomatoes, halved

1 cup bell peppers (red, yellow, and green), diced

1 cup cucumber, diced

1 cup sweet corn (fresh or frozen)

1 cup black olives, sliced

1/2 cup red onion, finely chopped

1 cup mozzarella balls, halved (optional)

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rainbow pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, bell peppers, cucumber, and red onion. Add the sweet corn and sliced olives to the mix.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, oregano, salt, and pepper until well combined.
