Ingredients

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup snap peas, trimmed

1 cup broccoli florets

1 medium carrot, julienned

1 cup baby corn, halved

3 tablespoons vegetable oil (e.g., canola or sesame)

3 cloves garlic, minced

1 tablespoon ginger, minced

½ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame seeds (for garnish)

3 green onions, chopped (for garnish)

Cooked rice or quinoa (for serving, optional)

Instructions

Prep the Veggies: Wash and slice all the vegetables as mentioned in the ingredients list. Make sure to cut them into bite-sized pieces for even cooking.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté Aromatics: Add the minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant. Be careful not to burn them.

Cook the Veggies: Add the sliced bell peppers, snap peas, broccoli, carrots, and baby corn to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are tender but still crisp. Stir frequently during this time to ensure even cooking.

Add Teriyaki Sauce: Pour the teriyaki sauce over the stir-fried vegetables and toss well to evenly coat. Continue to stir-fry for another 2-3 minutes until everything is heated through and the sauce is well distributed.

Serve: Remove the skillet from heat. Serve the stir-fry hot over cooked rice or quinoa if desired. Garnish with sesame seeds and chopped green onions.
