Quick Teriyaki Salmon Bowls with Rice

Ingredients
  

2 salmon fillets (about 6 oz each)

1/4 cup teriyaki sauce (store-bought or homemade)

1 cup jasmine rice

1 1/2 cups water

1 cup broccoli florets

1 medium carrot, julienned

1 teaspoon sesame oil

1 tablespoon olive oil

2 green onions, sliced

1 teaspoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Rice:

    Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

      Prepare the Vegetables:

        While the rice is cooking, bring a small pot of water to a boil. Blanch the broccoli florets for about 2 minutes until vibrant and tender-crisp. Remove them and immediately place them in ice water to stop the cooking process. Drain and set aside.

          Cook the Salmon:

            In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Add the salmon to the skillet, skin-side down.
