Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups mixed vegetables (bell peppers, carrots, broccoli, snap peas)

2 tablespoons vegetable oil

3 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Chicken: In a large bowl, combine the chicken pieces with soy sauce, teriyaki sauce, honey, minced garlic, and grated ginger. Mix well and let marinate for about 15 minutes to absorb the flavors.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once the oil is hot, add the marinated chicken pieces, spreading them out in the pan.

Cook the Chicken: Stir-fry the chicken for 5-7 minutes until it is cooked through and lightly browned. Use a wooden spoon or spatula to ensure it cooks evenly.

Add Vegetables: Add the mixed vegetables to the skillet with the chicken. Stir-fry everything together for another 3-5 minutes until the vegetables are tender but still crisp.

Finish the Dish: Drizzle the sesame oil over the stir-fry, tossing everything together until well combined. Cook for an additional minute to heat through and let the flavors meld.

Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve immediately over cooked rice or quinoa.
