Quick Teriyaki Beef and Vegetable Stir-Fry

1 lb (450g) sirloin beef, thinly sliced against the grain

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium preferred)

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 teaspoon sesame oil

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Teriyaki Sauce: In a small bowl, combine soy sauce, mirin, brown sugar, minced garlic, and grated ginger. Mix until the sugar dissolves. Set aside.

    Cook the Beef: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced beef in a single layer and cook for 2-3 minutes, stirring occasionally, until browned. Remove the beef from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the bell pepper, broccoli, carrot, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

        Combine Beef with Veggies: Return the cooked beef to the skillet with the vegetables. Pour the teriyaki sauce over the mixture and stir well.

          Thicken the Sauce: Add the cornstarch-water mixture to the skillet. Stir continuously as the sauce thickens, about 1-2 minutes. Drizzle with sesame oil for added flavor.

            Serve: Once everything is well combined and heated through, remove from heat. Serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
