Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons vegetable oil, for frying

3 cloves garlic, minced

1-inch piece ginger, grated

1/2 cup low-sodium soy sauce

1/4 cup rice vinegar

1/4 cup brown sugar

2 tablespoons hoisin sauce

1 tablespoon sriracha (adjust for desired heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: In a mixing bowl, combine cornstarch, salt, and pepper. Toss the chicken pieces in the cornstarch mixture until evenly coated. Shake off any excess cornstarch.

Fry the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the coated chicken pieces in a single layer. Fry for about 4-5 minutes until golden brown and crispy, then remove them and place them on a plate lined with paper towels to drain excess oil.

Make the Sauce: In the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Then, add soy sauce, rice vinegar, brown sugar, hoisin sauce, and sriracha. Stir well and bring the sauce to a simmer.

Coat the Chicken: Once the sauce is simmering, add the crispy cooked chicken back into the skillet. Toss to coat the chicken thoroughly in the sauce. Cook for another 2-3 minutes until the sauce thickens slightly.

Serve: Transfer the General Tso's chicken to a serving plate. Garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or with your favorite side.
