1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces

2 tablespoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Optional: Cooked white or brown rice, for serving

Optional: Steamed broccoli or other vegetables, for serving

Instructions
 

Marinate the Chicken: In a medium mixing bowl, combine soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Add the bite-sized chicken pieces to the marinade, ensuring all pieces are coated. Let it marinate for at least 15 minutes while you prepare other ingredients.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat.

      Cook the Chicken: Once the oil is hot, add the marinated chicken, discarding any leftover marinade. Sauté the chicken for about 5-7 minutes or until it's golden brown and cooked through, stirring occasionally.

        Thicken the Sauce: Once the chicken is fully cooked, push it to one side of the pan. In the space created, add the cornstarch-water mixture. Stir it into the chicken and cook for an additional 2-3 minutes, or until the sauce has thickened.

          Garnish & Serve: Remove the skillet from heat. Sprinkle with chopped green onions and sesame seeds for garnish. Serve hot over cooked rice and alongside steamed broccoli or your choice of vegetables.
