Ingredients

4 salmon fillets (about 6 oz each)

1 bunch asparagus, trimmed

3 tablespoons olive oil

Juice and zest of 1 large lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley or dill, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the salmon, ensuring each fillet is well coated. Let it marinate for about 10-15 minutes while you prepare the asparagus.

Prepare the Asparagus: On a large baking sheet, place the trimmed asparagus. Drizzle with the remaining marinade and toss to coat evenly. Spread them out in a single layer.

Bake the Salmon and Asparagus: Make space for the salmon fillets in the middle of the baking sheet with the asparagus. Place the marinated salmon fillets skin-side down on the baking sheet. Bake everything in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve: Once cooked, remove from the oven and let sit for a minute. Garnish with fresh parsley or dill, if desired. Serve warm, and enjoy your delicious, quick meal!
