1 lb large shrimp, peeled and deveined

1 cup fresh pineapple, chopped into small pieces

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, shredded

½ avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Marinate the Shrimp: In a bowl, combine olive oil, lime juice, chili powder, garlic powder, cumin, salt, and pepper. Add the shrimp and mix until well-coated. Let it marinate for about 15 minutes.

    Grill the Shrimp: Preheat your grill or stovetop grill pan over medium-high heat. Add the marinated shrimp to the grill in a single layer. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Add the chopped pineapple to the grill and cook for 1-2 minutes until caramelized, turning occasionally.

      Warm the Tortillas: While the shrimp and pineapple are grilling, warm the tortillas on another side of the grill or in a skillet over low heat for about 30 seconds on each side until soft and pliable.

        Assemble the Tacos: Layer the grilled shrimp and pineapple on each tortilla. Top with shredded red cabbage, sliced avocado, and fresh cilantro.

          Serve: Squeeze fresh lime juice over the tacos and serve immediately with lime wedges on the side for extra zest.
