Ingredients

For the Grilled Cheese:

4 slices of your favorite bread (sourdough, whole wheat, or white)

4 slices of sharp cheddar cheese (or cheese of choice)

2 tablespoons unsalted butter, softened

Optional: 1 tablespoon Dijon mustard for an extra kick

For the Tomato Soup:

1 can (14 oz) crushed tomatoes (or 2 cups fresh tomatoes, diced)

1 cup vegetable broth (or chicken broth)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

1 teaspoon sugar (to balance the acidity)

Salt and pepper to taste

2 tablespoons olive oil or butter

Optional: A splash of cream for extra richness

Instructions

Prepare the Soup:

    - In a medium saucepan, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      - Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        - Add in the crushed tomatoes, vegetable broth, dried basil, and sugar. Season with salt and pepper to taste.

          - Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer for about 15 minutes, stirring occasionally.

            - If desired, blend the soup with an immersion blender for a creamy texture, then stir in a splash of cream.

              Make the Grilled Cheese:

                - While the soup is simmering, spread butter on one side of each slice of bread. If using, spread Dijon mustard on the unbuttered side for added flavor.

                  - Place two slices of bread, butter-side down, on a skillet over medium heat. Layer two slices of cheese on each piece of bread.

                    - Top with the remaining slices of bread, butter-side up. Cook until golden brown and crispy, about 3-4 minutes per side. Lower the heat if the cheese isn't melting through by the time the bread is golden.

                      - Remove from the skillet and let cool for a minute before slicing.

                        Serve:

                          - Ladle the luscious tomato soup into bowls and serve with the grilled cheese sandwiches on the side or cut into triangles for dipping. Enjoy this warm and comforting meal!
