Quick Beef and Broccoli Stir-Fry with Rice

1 lb beef flank steak, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper (red or green), sliced

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

2 cups cooked jasmine rice

1 tablespoon sesame oil

Salt and pepper to taste

Optional: sesame seeds and green onions for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for about 10-15 minutes while you prepare the vegetables.

    Blanch the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for about 2 minutes, then transfer them to an ice bath to stop the cooking process. Drain and set aside.

      Cook the Beef: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the pan and set aside.

        Sauté Vegetables: In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant. Then add the sliced bell pepper and blanched broccoli. Stir-fry for another 3-4 minutes until the veggies are tender yet crisp.

          Combine & Finish: Return the beef to the wok and add the remaining 2 tablespoons of soy sauce and 1 tablespoon of oyster sauce. Pour in the sesame oil, tossing everything together until well coated and heated through. Adjust seasoning with salt and pepper as needed.

            Serve: Serve the beef and broccoli stir-fry over a bed of warm jasmine rice. Optionally, garnish with sesame seeds and chopped green onions for extra flavor and presentation.
