1 pound beef sirloin, sliced thinly

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

Salt and pepper, to taste

8 ounces egg noodles (or pasta of choice)

Fresh parsley, chopped (for garnish)

Cook the Egg Noodles: Begin by boiling a pot of salted water. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water in case you need to loosen the sauce later.

    Sear the Beef: In a large skillet over medium-high heat, add the olive oil. Once hot, add the sliced beef sirloin in a single layer. Sear for about 2-3 minutes on each side until browned, but not fully cooked. Remove the beef from the skillet and set it aside.
