2 cups masa harina (corn flour)

1 cup warm water

1 tsp salt

1 cup shredded cheese (such as mozzarella, Quesillo, or a blend)

1/2 cup cooked beans (refried or whole)

1/4 cup diced jalapeños (optional for a spicy kick)

1/4 cup chopped fresh cilantro (for garnish)

Vegetable oil (for cooking)

Instructions
 

Prepare Dough: In a large mixing bowl, combine masa harina and salt. Gradually add warm water, mixing with your hands until a smooth, pliable dough forms. If the dough feels too dry, add a little more water, one tablespoon at a time; if too sticky, add a bit more masa harina.

    Divide Dough: Pinch off pieces of dough (about the size of a golf ball) and roll them into smooth balls. You should yield around 8-10 balls.

      Flatten Dough: Using a tortilla press or your hands, flatten each ball between two sheets of plastic wrap or parchment paper until it’s about 1/4 inch thick.

        Add Fillings: Place a tablespoon of cheese and a tablespoon of beans in the center of the tortilla. If desired, sprinkle some diced jalapeños on top. Fold the edges of the tortilla over to seal the filling inside, gently pressing to form a sealed disc.

          Cook the Pupusas: Heat a nonstick skillet or griddle over medium heat and lightly coat with vegetable oil. Cook each pupusa for about 4-5 minutes on each side or until they develop a golden brown color and the cheese is melted inside.

            Serve Warm: Remove the pupusas from the skillet and keep them warm by wrapping them in a clean kitchen towel. Serve the pupusas garnished with fresh cilantro and alongside your favorite salsa or curtido (pickled cabbage slaw).
