Ingredients

1 cup creamy peanut butter (natural)

1/2 cup pumpkin puree

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin spice mix (or 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ginger)

1 cup dark chocolate chips (or milk chocolate, depending on preference)

1 tablespoon coconut oil (optional, for chocolate smoothness)

Sea salt, for sprinkling (optional)

Instructions

Prepare the Pumpkin Peanut Butter Mixture:

    - In a mixing bowl, combine the creamy peanut butter, pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice mix. Stir well until the mixture is smooth and fully combined. Adjust sweetness if desired by adding additional powdered sugar.

      Melt the Chocolate:

        - In a microwave-safe bowl, add the chocolate chips and 1 tablespoon of coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

          Set Up Muffin Liners:

            - Line a muffin tin with paper liners (mini or regular, depending on your preferred size). To ensure easy removal, lightly spray the liners with cooking spray.

              Layer the Chocolate:

                - Spoon a small amount of melted chocolate into the bottom of each muffin liner, just enough to cover the base (about 1-2 teaspoons). Use the back of the spoon to spread it evenly. Place the muffin tin in the freezer for about 10 minutes to set.

Add the Pumpkin Spice Peanut Butter Mixture:

                    - Once the bottom layer has set, remove the muffin tin from the freezer. Add a tablespoon of the pumpkin peanut butter mixture on top of the chocolate layer in each cup, smoothing it out gently.

                      Top with More Chocolate:

                        - Pour another layer of melted chocolate over the peanut butter mixture, ensuring it completely covers it. Use the back of a spoon to smooth the chocolate layer on top.

                          Optional Finishing Touch:

                            - If desired, sprinkle a tiny pinch of sea salt on the top of each cup for an added flavor contrast.

                              Chill and Set:

                                - Return the muffin tin to the freezer and let the cups set for at least 30 minutes or until the chocolate is firm.

                                  Serve and Enjoy:

                                    - Once set, remove the pumpkin spice peanut butter cups from the muffin tin and peel away the paper liners. Store in an airtight container in the refrigerator for up to a week.

Prep Time: 20 minutes | Total Time: 1 hour | Servings: 12 (mini) or 6 (regular)
