2 cups rolled oats

1 cup raw pumpkin seeds (pepitas)

1/2 cup chopped pecans

1/2 cup honey or maple syrup

1/2 cup canned pumpkin puree

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

      Mix Dry Ingredients:

        In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped pecans, pumpkin pie spice, cinnamon, and salt. Stir until well mixed.

          Combine Wet Ingredients:

            In a separate bowl, whisk together the honey (or maple syrup), pumpkin puree, melted coconut oil, and vanilla extract until smooth and well combined.

              Combine Mixtures:

                Pour the wet mixture into the dry ingredients and stir until all the oats and nuts are thoroughly coated.

                  Form Clusters:

                    Transfer the mixture onto the prepared baking sheet and spread it out evenly. Use your hands to press the mixture down firmly, forming clusters as you go.

                      Bake:

                        Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the mixture is golden brown. Be sure to stir halfway through to ensure even baking.

                          Add Dried Fruits & Chocolate:

                            Once out of the oven, let the granola cool for about 10 minutes. If desired, fold in the dried cranberries (or raisins) and chocolate chips at this stage.

                              Cool and Store:

                                Allow the granola to cool completely on the baking sheet before breaking it into clusters. Store in an airtight container at room temperature for up to two weeks.
