Ingredients

1 small baguette or sourdough bread, sliced into 1/2-inch pieces

1 cup pure canned pumpkin puree (not pumpkin pie filling)

4 oz goat cheese, softened

1 tbsp honey

2 tbsp olive oil, plus more for drizzling

1 tsp fresh thyme leaves, plus extra for garnish

1/2 tsp ground nutmeg

Salt and pepper to taste

Toasted pumpkin seeds, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Bread: Arrange the sliced bread on a baking sheet. Drizzle with olive oil and lightly season with salt and pepper. Toast in the oven for about 10-12 minutes, or until golden brown and crispy. Keep an eye on them to avoid burning.

Make the Pumpkin Mixture: In a mixing bowl, combine the pumpkin puree, ground nutmeg, fresh thyme, salt, and pepper. Mix well until evenly combined.

Prepare the Cheese Spread: In another bowl, blend the softened goat cheese with honey until smooth and creamy. You can add a dash of salt if desired to enhance the flavor.

Assemble the Crostini: Spread a generous layer of the pumpkin mixture on each toasted bread slice, followed by a dollop of the goat cheese spread.

Garnish: Drizzle a little olive oil on top of each crostini. If desired, sprinkle toasted pumpkin seeds and additional thyme leaves for an added crunch and flavor.

Serve: Arrange the crostini on a serving platter. Enjoy them warm or at room temperature as an appetizer or party snack!
