Ingredients

1 cup pumpkin puree (canned or homemade)

1/2 cup creamy peanut butter or almond butter

1/2 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup whole wheat flour (or gluten-free flour)

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free for a vegan option)

1/4 cup chopped nuts (optional, for added crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal. Lightly grease the parchment.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, peanut butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

Combine Dry Ingredients: In another bowl, whisk together the rolled oats, whole wheat flour, baking powder, cinnamon, nutmeg, and salt until evenly combined.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix; you want it combined but still a little chunky.

Add Chocolate and Nuts: Fold in the dark chocolate chips and chopped nuts (if using) until they are evenly distributed throughout the batter.

Spread and Bake: Spread the batter evenly into the prepared baking pan, smoothing out the top with a spatula. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool and Cut: Once baked, remove the pan from the oven and allow it to cool in the pan for about 10 minutes. Then, lift the bars out using the parchment overhang and let them cool completely on a wire rack. Once cooled, cut into squares or rectangles.

Store & Serve: These snack bars can be stored in an airtight container at room temperature for up to a week or in the fridge for longer freshness. Enjoy as a delicious snack or a quick breakfast on-the-go!
