1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsweetened pumpkin puree

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/4 cup chopped nuts (optional, for added crunch)

Instructions
 

Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan, or line it with parchment paper for easy removal.

    In a medium bowl, mix together the rolled oats, flour, baking powder, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger. Whisk until well combined and set aside.

      In a large mixing bowl, combine the brown sugar and granulated sugar. Add the pumpkin puree, oil, eggs, and vanilla extract. Mix until smooth and fully incorporated.

        Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

          Fold in the chocolate chips and nuts (if using), making sure they are evenly distributed throughout the batter.

            Pour the batter into the prepared baking pan, spreading it evenly with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.

                Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
