Ingredients

1 medium onion, diced

2 cloves garlic, minced

1 medium red bell pepper, diced

2 cups pumpkin puree (fresh or canned)

2 cups diced apples (Granny Smith or Honeycrisp work well)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) diced tomatoes with juices

2 cups vegetable broth

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground cinnamon

Salt and pepper to taste

Optional: 1-2 teaspoons maple syrup (for sweetness)

Fresh cilantro or parsley, for garnish

Sour cream or yogurt, for serving (optional)

Instructions

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and diced red bell pepper, cooking for an additional 3 minutes until fragrant.

Add the Pumpkin and Apples: Stir in the pumpkin puree and diced apples. Mix well to combine the flavors with the sautéed vegetables.

Mix in the Spice: Add in the chili powder, cumin, smoked paprika, cinnamon, and season with salt and pepper. Mix everything thoroughly to distribute the spices.

Incorporate Beans and Tomatoes: Pour in the black beans, kidney beans, diced tomatoes (with their juices), and vegetable broth. Stir well to combine all ingredients.

Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, stirring occasionally.

Adjust the Flavor: Taste the chili and adjust seasoning as needed. If you'd like a touch of sweetness, stir in maple syrup to enhance the flavors.

Serve: Ladle the chili into bowls. Garnish with fresh cilantro or parsley and a dollop of sour cream or yogurt if desired.

Enjoy: This chili is perfect served with crusty bread or cornbread for a hearty harvest meal!
